I have to disable the desktop menu on my windows 2000 machines because they are going 
into labs for students to use. We don't want them to be able to make any change to 
the desktop or H/D

So what's your question? Windows 2000 is derived from windows NT and has all the same access/security features of NT. Create a separate account(s) for the students and restrict the access on that account via the "local security policy" in Administrative Tools. As a rule of thumb it's always good to rename the default administration account and disable the Guest account as well. Remember, any policy changes you wish to affect the user, must be made while you are logged in as the user (attempting to make policy changes from the Admin account will give you headaches).
