You can do this through the GPO.
Start -> Run -> MMC -> File -> Add / Remove Snap-In -> Add -> Group Policy Object
Editor -> Local Computer -> Finish -> Close -> Ok
Expand LCP -> Computer configuration -> Administrative Templates -> Windows Components
-> Windows Updates
2 things you can configure here:
a. No auto-restart for scheduled... Enable this to tell the computer to wait until
next logged in user restarts the computer before continuing.
b. Delay restart for scheduled installations... Set the delay time in between reminders
to restart the computer.
