Server 2003 with Exchange - I need my email/contacts to travel with me, how?

My laptop is connected to Server 2003 with Exchange and my outlook only works while
in the office. How can I make my files follow me after I disconnect from the network?
I'd like a file (the pst) to have a copy of the server, just in case. Possible?
