Can't change the read only attributes on a folder in Windows 2003.

OK, here's the deal: New Windows 2003 server. I copied all the files from the old 
Windows 2000 server to the new server, shared them again, etc.

But I can't seem to be able to change the permissions on these files! I do this: 
I log to the server with administrator user, I enter permissions and then advanced, 
then owner (or the equivalent in the english version of 2003) and then I set all 
the folders & subfolders to belong to the administrator user.

Then, in the folder propierties, I deselect "read only" attribute (which is gray, 
indicating some of the files are read only) then I chose to apply to all subfolders.

I go back to check how it went and nothing, it's all the same. Read only in gray 
again.

I need to change this because one of the girls who works with these files opens them 
as read only because of this and that's very annoying to her... the weird thing is 
that only she has this problem, all the other people working on the same files open 
them without problems. And the operative system is the same, as is the Microsoft 
Office version (they are .doc files).
