I would consider running Windows 7 on a Virtual PC. You would receive a performance hit because you would be running two operating systems at once, but I doubt much less than running on external drives. eSATA is of course the same speed as internal but I have found that messing around with partitions after Vista/7 are installed can stop the PC from booting. Taking an eSATA drive away from a system might be risky. At least with VM you can get a feel for Windows 7, see if you like the interface and then upgrade later.
