Try right clicking on the lower task bar and select Properties. This should bring up the Task Bar and Start Menu properties. I'm using XP currently so it may be a bit different. XP has a Start Menu tab and a Customize button and then under the Advanced Tab is a option to put a check in a box to list most recent documents. Like I said ME is probably different but if I remember right it is in there. Good luck!!
