If you don't have Microsoft Word, the download the Word viewer. It will allow you
to read, and Print Word documents.

My problem is, a Windows 2000 .doc file with pictures displays/opens in Vista with
words and no pictures.
Vista only seems to open .txt files.

Vista doesn't open anything !
Notepad is opening the .txt files.
To open .doc files you need one of these installed:
1. Microsoft Word
2. Microsoft Office viewer (free)
3. Open Office (free)
