Windows XP Home/Pro can address any amount of RAM you throw at it (well, up to 4GB). So the more you can afford, the better off you'll be. 256MB should be fine for what you want to do, unless you're using some advanced (professional) editing tools. However for things like Photoshop and the like, it's fine. And adding additional RAM later should only get cheaper.
