XP will install directly form the CDROM, assuming that you can boot from a CDROM. 
 Try it.  If it fails to see the CD, then change the BIOS setting to boot from CD 
first.  

By the way, XP has no DOS, although it does have a recovery console (run form the 
CD) that feel like DOS.  XP does have a command prompt, that also feels like DOS, 
but really is not DOS either.

As for the optical devices, they should be on a separate IDE controller form the 
hard drives.  It is never a good idea to mix fast and slow devices on the same IDE 
controller.  If they are on their own controller today, leave them alone, they will 
not interfer with the hard drive.  the new hard drive should be the master, and on 
its own controller.

You should prepare the hard drive before installing XP.  Most drives come with a 
floppy or two to handle this in a friendly manner.  Otherwise, do fdisk and format. 
 If the hard drive is > 32-64Gig (I forget which), you will need a modern version 
of fdisk.

Caution:  Are you sure that your BIOS/motherboard can handle the new hard drive? 
 Many older motherboards are limited to 32Gig per disk (not per partition).  Some 
newer ones have a 128Gig limit.  Really new ones can go above 1000Gig.  If you suspect 
a BIOS limit, get an ATA/100 controller card (PCI card) and connect the hard drive 
to it.

Think carefully about whether you want multiple partitions.  I like to XP, programs, 
and user data on separate partitions.  I also like at least one spare/backup partition.
