It all depends on the program, most can be prevented from starting through the registry, however this means locating the correct key and modifying it corectly.

A more convient way is to run msconfig from the run window, select the startup tab and it has a list of programs, you uncheck the one you wish to disable.

Others place a shortcut into the Startup Folder inside the Programs Menu, you simply delete the shortcut.

Other programs are associated with services, which you need to run the services.msc console from the run window, and stop the service then in hte properties of that service disable or select a manual start.
