Check your Start Up Folder under All Programs from the Start menu. Right click on the item that you don't want to start and hit delete. These are just shortcuts so you can always put them back if needed. Any other items in the tray can be disabled by going into the Programs settings or preferences and unselecting load at startup, add tray icon etc. depending on the program. Good luck with that!!
