I use both Office 2000 & 2003 and can't remember ever seeing the Outlook icon in the systray, but if it's there it's because it's being started at bootup. Go to Run and type in msconfig and in the Startup tab find the entries for either/or Microsoft Office and Outlook and uncheck them. Look for other unnecessary startup items while you're there too. Apply and reboot.
