im not totally sure.. but i dont think that doing so can corrupt the 2003 version..
but before doing it, just make sure you have a 2003 installer handy..
in case after uninstalling office 2000 and problems do crop up, you can then perform a repair to your office 2003 using its installer.. no sweat.. :)
