Question about 'Display your file extensions'

The note about Display your file extensions describes how to have file extensions display in the browser.

I guess I've gotten used to having the extension hidden. My problem is that if the extension is wrong, there is no way to fix it. If I rename "foo.txt" (with ".txt" hidden) to "foo.blah", the file is really named "foo.blah.txt". Without having extensions shown, how can I change the extension?
