it is not straightforward to go back from Outlook 2003 .pst files to Outlook 2000, 
but also not impossible.

Please read this.

However before taking such a drastic step as to uninstall Office 2003 I would post 
your problem about the updater at Woody's_Lounge.

PS Did you try a system restore to before you experienced these issues ?
